recipe | zucchini bread

Last week I told you all about what we made with the items in our very first CSA box, with the exception of the zucchini.

I don’t know about you, but zucchini bread is one of my fondest childhood memories.  My mother had a friend who would bake it all the time, and I was always so excited when she came home from a visit with a new loaf. So, I was shocked when Dan told me he’d never heard of zucchini bread–blasphemy!  I knew what to do as soon as I saw the zucchini in our CSA box, and got to it.

I adapted this recipe from AllRecipes.com to make it just a little healthier.  It came out fantastic!

Ingredients (makes 2 8×4 loaves):

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups white whole-wheat flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 1/2 tsp nutmeg
  • 3 eggs
  • 1/2 cup low-fat milk
  • 1 ripe banana, mashed
  • 1/4 cup applesauce
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 3 teaspoons vanilla extract
  • 3 cups grated zucchini (for me, this was three zucchinis)
  • 1 cup chopped walnuts
Preheat your oven to 325 degrees Farenheit.  Line two 8×4 pans with parchment paper (this makes removal of the baked loaves much easier).
Combine both of the flours, salt, baking powder & soda, cinnamon, and nutmeg into a bowl.
 In a separate bowl, mix together the eggs, milk, applesauce, mashed banana, sugars, and vanilla extract.  Mix this with the dry ingredients.  Stir in the zucchini & walnuts.

Pour the batter into the two loaf pans.  Here are my super messy loaves, ready to go into the oven (hey, who said baking was glamorous?)

Let the loaves bake for about an hour.  Mine took a little bit longer.  Keep checking to see if the loaves are done using a toothpick!

Let the loaves cool before removing them from the pans.

Sit back & enjoy the fruits (veggies?) of your labor!  I love how refreshing zucchini bread is.  It also comes out very moist–you almost want a glass of milk with it! :)

  1. I love making zucchini bread! I will definitely have to give this recipe a go because it looks scrumptious!

    Our garden sometimes gets overloaded with zucchini and while we do give some to our neighbors and friends, we put it to use ourselves. I enjoy making zucchini brownies and my dad makes a great zucchini bake with onions, eggs, cheese and Bisquick. Not exactly the healthiest but it is delicious!

      That is so awesome that you guys get so much zucchini! We have gotten it in each CSA box so far, so I can only assume it bears a big bounty when it’s ready. Zucchini brownies sound really interesting & awesome…I might have to look into that!!

    Actually, zucchini bread is one of my nostalgic childhood things too. I don’t know that we actually had it that often, I remember my Nina’s and Granny (great grandmother)’s cookies better, but something about the taste and smell always brings my grandparents to mind.

  3. Oh yum! I love zucchini bread…my mom made it all the time growing up. It was always so hard to pick my favorite between banana bread, cranberry/orange bread and zucchini bread…all so good!

      Whoa, cranberry/orange bread sounds like it would be fantastic! I’m gonna have to look up a recipe for that. I don’t eat bread often, so when I do I like to make it into a treat by having something like zucchini bread. :)

    “never heard of zucchini bread” …?? what planet is he from? Sounds fishy to me…
    My kid loves fruits and vegetables… except of course zucchini, which we currently have a plethora of. So we had zucchini bread pancakes for dinner last night, which I invented in order to serve a lower-sugar form of zucchini bread. Maybe next time I should just use your recipe and go ahead and make the bread.

      Ahhh hahaha. I know, right? Your son sounds like the coolest kid ever. I prefer the bread–zucchini is alright prepared in veggie dishes, but I find it kind of bland. Having it in the zucchini bread helps me use it up!
